Banana Bread Muffins

Baking time : 20 minutes or until brown.

Ingredients

  • 2 or 3 mashed brown bananas
  • 0.3 cup melted butter (75 grams)
  • 0.5 to 1 cups of brown sugar
  • 1 egg
  • 1 TSP baking soda
  • 1 TSP vanilla essence
  • 1 pinch of salt
  • 1.5 cups of flour

Optional

  • White/brown chocolate flakes
  • Raw peacanuts

Method

  • Preheat oven to 180 degrees
  • Melt the butter in a bowl
  • Whisk the egg and add to the bowl
  • Mash the bananas and add them to the bowl
  • Add the rest of the ingredients (plus optional if you added)
  • Mix together, dont over mix
  • Place a little rice in the base of the muffin pans
  • Pop about 2/3 mixture in paper cupcake (makes about 15)
  • Bake for 20 minutes or until brown (test poke with a toothpick, if it comes out clean its cooked)

You can also use the same ingredients and some method as the above to make a loaf.

Just pop some wax-paper in the tin first and bake at 180 degrees for 40 to 45 minutes.

I poke it with a breadstick to check if the center is cooked.
