Baking time : 20 minutes or until brown.
Ingredients
- 2 or 3 mashed brown bananas
- 0.3 cup melted butter (75 grams)
- 0.5 to 1 cups of brown sugar
- 1 egg
- 1 TSP baking soda
- 1 TSP vanilla essence
- 1 pinch of salt
- 1.5 cups of flour
Optional
- White/brown chocolate flakes
- Raw peacanuts
Method
- Preheat oven to 180 degrees
- Melt the butter in a bowl
- Whisk the egg and add to the bowl
- Mash the bananas and add them to the bowl
- Add the rest of the ingredients (plus optional if you added)
- Mix together, dont over mix
- Place a little rice in the base of the muffin pans
- Pop about 2/3 mixture in paper cupcake (makes about 15)
- Bake for 20 minutes or until brown (test poke with a toothpick, if it comes out clean its cooked)
Loaf
You can also use the same ingredients and some method as the above to make a loaf.
Just pop some wax-paper in the tin first and bake at 180 degrees for 40 to 45 minutes.
I poke it with a breadstick to check if the center is cooked.
